STUFFED PARSLEYED ONIONS

INGREDIENTS 1 -4 large onions 2- 4 tbsp cooked rice 3- 4 tsp chopped parsley 4- 4 tbsp cheddar cheese (grated) 5- 2 tbsp olive oil 6- Salt and freshly ground black pepper (as per your taste) METHOD 1-Take four onion and cut a slice from the top and scoop out the centre so that it leave a fairly thick shell. 2-Take a bowl and add remaining ingredients in a large bowl and mix it well , 3-Use a spoon to fill this mixture in the hollow onions and then wrap them in a piece of oiled baking foil. 4-Cook it on a hot coal for 30 to 40 minutes or until tender and turn it frequently so they cook evenly 5-Serve it with chopped parsley on the top. 6-You can use this dish with meat dishes or some crispy salad.

CHEESE BITES

Ingredients: 12 ounces extra sharp Cheddar cheese, shredded 3 egg whites, stiffly beaten 1/3 cup flour 2 to 4 dashes hot sauce Dash salt 1 teaspoon parsley flakes 1/4 teaspoon paprika cornmeal vegetable oil for frying METHOD Beat egg whites very stiff. Add shredded cheese to egg whites, then add flour, hot sauce, salt, parsley flakes, and paprika. Shape mixture into small balls and roll in cornmeal. Put oil in a heavy skillet to a depth of about 1/4-inch. Heat over medium-high heat. Place cheese balls hot oil; cook until golden brown, turning constantly.
