JUICY DRUMSTICKS

I NGREDIENTS 1 cup plumsauce 1/3 cup  honey 2 teaspoons soya sauce finely grated rind of 1 lime 1 tablespoon  finely grated ginger ¼ teaspoon  ground allspice 1 kilo   chicken drumsticks METHOD Preheat oven to 200°C. Line a large, shallow baking dish with non-stick baking paper. Place plum sauce, honey, soya sauce, lime rind, ginger and allspice in a bowl; stir to combine. Place drumsticks in prepared dish, and spoon plum sauce mixture over drumsticks. Bake 30- 40 minutes,  4-When you get nice golden brown colour serve hot.

FISH AND LEEK SOUP

INGREDIENTS 1- 1 small onion 2- 1 garlic clove (crushed) 3- 2 tbs oilve oil 4- 2 medium Leek and cut it into fine strips 5- 2 tbs chopped parsley 6- 225g  fish fillet (cubed) 7- 300 ml chicken stock 8- 300 ml skimmed milk 9- 3 tbs yoghurt 10- one egg yolk 11- 1 tbs finely chopped green pepper(for garnishing) METHOD 1-Take a pan and add 2 tablespoon olive oil fry the onion and garlic gently for 3 minutes  than add leek and parsley and fry for 3 more minutes. 2-Add the cubed fish, stock, skimmed milk and salt and pepper to taste and boil it gently for 10 more minutes. 3- Beat the yoghurt and egg yolk together. Blend it with little hot soup and than  add it to the remaining soup in the pan. 4-Heat through gently without boiling for 2 minutes. 5-Serve hot and garnish it with chopped green pepper. 

STUFFED PARSLEYED ONIONS

INGREDIENTS 1 -4 large onions 2- 4 tbsp cooked rice 3- 4 tsp chopped parsley 4- 4 tbsp cheddar cheese (grated) 5- 2 tbsp olive oil 6- Salt and freshly ground black pepper (as per your taste) METHOD 1-Take four onion and cut a slice from the top and scoop out the centre so that it leave a fairly thick shell. 2-Take a bowl and add remaining ingredients in a large bowl and mix it well , 3-Use a spoon to fill this mixture in the hollow onions and then wrap them in a piece of oiled baking foil. 4-Cook it on a hot coal for 30 to 40 minutes or until tender and turn it frequently so they cook evenly 5-Serve it with chopped parsley on the top. 6-You can use this dish with meat dishes or some crispy salad.

POTATO GARLIC SOUP WITH CAPSICUM

INGREDIENTS 1-Potatoes 400gm 2-Onion one medium(finely chopped) 3-Garlic 3 cloves finely chopped 4-Chicken stock 1 litre 5-Capsicum 2 medium 6-Basil 1 tbsp 7-Olive oil 60 ml METHOD 1- Take the potatoes and peel it and slice the potatoes . 2-Heat the Oilve oil in a pan and add chopped onion and fry it than add garlic and fry it . 3-Than add potatoes in it and stir fry potatoes add chicken stock and simmer it for 20 minutes. 4-Cut the capsicum in a julienne and set a side. 5-Pour the soup in the blender and after that put the mixture again in the the saucepan and boil. 6- In the end add the capsicum and cook it for 10 minutes and serve it with finely chopped basil on the top.

STEAMED CHICKEN

INGREDIENTS 1-Chicken whole 1.5 kg 2-Gram Masala powder 1 1/2 tsp 3-Black pepper 1/2 tsp 4-lemon juice 5 tsp 5-Red chilli powder 1 1/2 tsp 6-Ginger garlic paste 1 1/2tsp 7-Orange food colour a pinch 8-Cumin seeds ground and roasted 1 1/2tsp 9-Green chillies grinded  3 to 4 METHOD 1-Take a whole chicken and give slits on it . 2-Mix the all ingredients and apply it on the chicken and marinate it for 2 hours. 3-Steam coverer it for 35 minutes.Take it out and than deep fry it till you found a nice golden brown colour. 4-Serve it with sauce or some yoghurt dip. -

BBQ FISH RECIPE

INGREDIENTS 1-Fish whole approximately 1.5 kg 2- 2 tsp ginger/garlic paste 3-Salt 1tsp 4-Lemon juice 2 tsp 5-Red chilli 1 Tbsp 6-Green chillies 2 yo 4 7-Mint leaves 1 bunch 8-Coriander leaves 1 bunch 9-Cumin seeds 1tsp 10-Tamarind paste half cup 11-Turmeric 1/2 tsp 12 -Gram masala powder 1/2 tsp 13-Oil  1/4 CUP 14-Carom seeds  1/2 tsp METHOD 1-Take a blender first of all make the and put coriander ,mint leaves and green chillies and make a paste and set it aside. 2- Then make a paste of  tamarind and add the spices in it and apply this on the fish  and half of the green paste. 3- Marinate this fish at least two hours than  apply oil on it and  bake it in the oven for 30 minutes at 200 centigrade. 4-Than take it out and pour another half of the green paste and bake it for 5 more minutes and serve hot with fresh vegetables.

CLAFOUTIS

INGREDIENTS 1-100 ml milk 2-100 ml double cream 3-3 eggs 4-120 g caster sugar 5-few drops of vanilla essence 6-25 g butter 7-50 g cherries 8-30 g almonds flakes 9-1 cup plain flour 10-1 cup icing sugar METHOD 1-Pour the milk and double cream into a pan and bring to the boil, then add the vanilla essence and transfer to a bowl to cool down. 2-Whisk together the eggs and the caster sugar until the mixture is light and fluffy. 3-Break the butter into little pieces and sprinkle them into the bottom of a baking dish. 4-Add the cherries and the almonds flakes to the baking dish and put it in the oven at 180 degrees. 5-Add the flour to the egg mixture, then mix it with a spatula and add the cooled milk and cream. 6-Remove the dish from the oven and pour in the egg and cream mixture.Spread the cherries and almond evenly around the dish. 7-Bake in the oven at 180 degrees for 12-14 minutes. 8-When you see the nice brown colour take it out from the oven and serve wi

CHOCOLATE AND BANANA FOOL

INGREDIENTS 1-4oz semi sweet choclate broken into small pieces 2-300 ml vanilla flavour custarad 2- 2 bananas METHOD 1-Melt the choclate pieces on a double boiler or in a microwave. 2-Then take a custard in a bowl and mix it with melted choiclate. 3- Slice the bananas and mix it with choclate and custard mixture. 4-Pour the mixture into the glasses or in a bowl and chill it for at least 30 minutes before serving.

Nargasi Kofta

INGREDIENTS 1-Chicken 500gm 2-Almond 7 to 8 3-red chilli powder 1tsp 4-Coriander powder 1 1/2 tsp 5-cumin powder 1 tsp 6-Ginger garlic paste1 tsp 7-Onion chopped 2 8-Eggs no 6 9-Gram masala whole 1 Tbs 10-chopped green chilli 3 to 4 11-salt as per taste 12-Tomatoes 3 13-Oil for frying 14-turmeric a pinch Method 1-Boil and peel eggs mix spices to mince meat coat eggs with mincemeat.Deep fry koftas in oil till half done take it aside. 2- Heat oil in a pan and add whole garam masala ,cumin ,fry onions till golden brown add turmeric , ginger garlic paste , and cooks till smell  gone. 3-Add cumin,coriander ,red chilli powder add tomato and almond paste and cook ,add water and covered it. 4 -Add  green chilli ,and add koftas in it .Cook it till kofta cook properly. 5- Granish it with chopped coriander leaves serve hot with rice , chapati,naan.
