GREEN FISH COCONUT CURRY

INGREDIENTS 1-  4 Fish fillets(cut it into chunks) 2-  1 onion chopped 3-  2 fresh green chilies 4-  2 garlic cloves crushed 5-  2 Tbs lime juice 6-  1/4 cup cashew nuts 7-  1/2 tsp fennel seeds 8-  3 Tbs dry coconut 9-  2 Tbs oil 10- 1/4 tsp  ground seeds 11- 1/4 tsp ground coriander 12- 1/4 tsp salt 13- 3/4 yougart 14- 1/4 tsp ground cumin 15- 3 Tbs fresh coriander(chopped) 16- 2/3 cup water METHOD 1- Marinate the fish with turmeric, lime juice and salt and marinate it    for 15 minutes. 2- Now grind the onion,chili, garlic, cashew nuts,fennel and coconut and    make a paste and set aside. 3-Take  a pan heat oil anf fry the cumin seeds for one minutes than add the paste   and fry it for 5 minutes and stir in the ground coriander, cumin, salt and water   and cook for 3 minutes. 4-After that add yougart and chopped coriander than gently add fish pieces and stir. ...

FISH AND LEEK SOUP

INGREDIENTS 1- 1 small onion 2- 1 garlic clove (crushed) 3- 2 tbs oilve oil 4- 2 medium Leek and cut it into fine strips 5- 2 tbs chopped parsley 6- 225g  fish fillet (cubed) 7- 300 ml chicken stock 8- 300 ml skimmed milk 9- 3 tbs yoghurt 10- one egg yolk 11- 1 tbs finely chopped green pepper(for garnishing) METHOD 1-Take a pan and add 2 tablespoon olive oil fry the onion and garlic gently for 3 minutes  than add leek and parsley and fry for 3 more minutes. 2-Add the cubed fish, stock, skimmed milk and salt and pepper to taste and boil it gently for 10 more minutes. 3- Beat the yoghurt and egg yolk together. Blend it with little hot soup and than  add it to the remaining soup in the pan. 4-Heat through gently without boiling for 2 minutes. 5-Serve hot and garnish it with chopped green pepper. 

FISH IN SPICY RED SAUCE

INGREDIENTS 1-4 medium slices of fish 2-2 large onion chopped 3-3 tbsp of tomato paste mix with 3 tbsp water 4-1 tsp red chili flakes 5-1/2 cup oil 6-1/2 cup water 7-1/2 tsp salt 8- 1 tbs ginger garlic paste 9- 2 tbsp chopped mint and corinander leaves. METHOD 1-Take a pan and add oil in it. 2-Add the onion, chili flakes and salt. 3-Saute until the onion softens and add ginger garlic paste. 4-Add the tomato paste diluted in 3 tbsp water 5-Continue cooking until the onion becomes soft then add 1/2 cup water and let it boil. 6-When it boils, add the fish and cook over medium heat for 15 to 20 minutes. 7- Garnish it with corriander and mint leaves  and serve hot.
